Olive Garden chef visits Italy to learn cuisine secrets

One of the best chefs over at Cape Olive Garden is Jennifer Dineen. Of course, she would probably prefer us to use the title “culinary manager”. And a manager she is, as she misses no opportunity to improve and learn about the trade. Her last experience was no less than some 4.000 miles away, in sunny Italy.

There she participated in a special training of the Olive Garden team, along with other 10 managers. Needless to say, a trip to Italy teaches you a bit about food, health and style even without attending any specials programme. Still, Jennifer was sent to Olive Garden’s Culinary Institute of Tuscany, were fresh ingredients, healthy salads and of course a glass of Tuscan wine for everyone are all daily habits.

If case you want to know more, Olive Garden is a casual dining American restaurant chain specializing in Italian-American food. The first Olive Garden was opened by General Mills on December 13, 1982, in Orlando, Florida. As of 2008, there are 668 and more to be opened. Each year, Olive Garden selects approximately 100 managers to travel to Italy as part of the restaurant’s ongoing culinary training program. The ambiance of Olive Garden restaurants seeks to replicate an old-world Italian style, utilizing foliage in their décor, stucco walls, and hypnotic background music consisting of Italian themes. Their cuisine, however, differs from authentic Italian cuisine in a number of respects. Although, for example, Olive Garden once served veal – a dish often served as an entrée in traditional Italian cooking – it has since been removed from their menus. Also, their appetizers do not include cold-cut antipasto dishes, which are a key feature of a traditional Italian meal. Their culinary identity is better described as Italian-American cuisine.

The group of managers visited during their stay in Italy: Olive Garden’s Riserva di Fizzano restaurant and the Rocca delle Macie winery, Olive Garden’s partner and one of Italy’s leading producers of Tuscan wines.
